Turkey and Sweet Potato Patties
Spruce up your turkey patties by adding fresh vegetables and ginger to increase nutrients, flavors and keep them juicy.

Ingredients
1 small (150 grams) sweet potato, scrubbed and peel intact
1 small (118 grams) zucchini, grated
1 medium (110 grams) white onion, diced
3 stalks green onion, sliced thinly
1 tablespoon ginger root, grated
3 cloves garlic, minced
1 pound (16 ounces) ground turkey
1 medium egg
1 tablespoon soy sauce, low-sodium
⅓ cup breadcrumbs (Please, link to our KK recipe for breadcrumbs; (used kidney kitchen breadcrumbs recipe for nutrient analysis)

Instructions
- Preheat oven to 375°F.
- Roast the sweet potato in a baking dish in the oven until soft (approximately 30 to 40 minutes).
- Remove from the oven and cool slightly.
- Peel off the skin and mash the potato.
- Combine the mashed sweet potato, zucchini, white and green onions in a medium mixing bowl.
- Add the ginger, turkey, egg, soy sauce, and breadcrumbs. Mix well.
- Line a baking sheet with parchment paper.
- Form small patties about 2 inches in diameter.
- Bake for 25 minutes.
- Serve warm with a side salad.
Cooking Tip
If you have a food processor, place all your prepared ingredients (sweet potato mashed first) inside and pulse to combine. An alternative cooking method is to grill the patties on a grill or grill pan.
