Makes

5 servings (1 ¼ cup breadcrumbs or 1 ounce)

Serving size

¼ cup

Ingredients

4 ounces stale or dried bread, cut/torn into 1-inch pieces

1 tablespoon Italian seasoning (no salt; typically basil, marjoram, oregano, rosemary, sage and thyme)

½ teaspoon garlic powder

Special Equipment:

Blender or Food Processor

Instructions

  1. Preheat oven to 300 degrees.
  2. Place all the ingredients in a blender or food processor.
  3. Cover and pulse until coarse crumbs form, about 2 minutes.
  4. Spread the seasoned crumbs evenly on a baking sheet.
  5. Bake until the crumbs just begin to brown and are crisp, about 5 minutes.
  6. Cool the crumbs.
  7. Transfer to an airtight container. Store at room temperature for up to 2 weeks or in the freezer for up to 6 months.
  8. Enjoy your homemade staple!

Cooking Tip

If your bread is not stale, you can dry it in the oven at 250 degrees for about 30 minutes. Then process per the above recipe. You will need an additional ounce of the bread to yield 4 ounces of dried bread per recipe above.
