Spicy Oven-Baked Onion Rings

2 medium (220 grams) onions, cut into ¼-inch slices
1 cup unbleached flour
½ teaspoon baking powder
1 teaspoon cayenne, ground
1 teaspoon paprika, ground
¼ teaspoon cumin, ground
¼ teaspoon black pepper
1 teaspoon oregano, dried
1 teaspoon fennel seeds, ground
1 cup milk
1 large egg
1 cup breadcrumbs, plain low sodium
¼ cup sunflower oil or any other neutral oil

Instructions

- Preheat the oven to 450°F.
- Separate the onion slices into rings and discard any loose membranes from the rings.
- Stir flour, baking powder, spices, and dried herbs together in a medium mixing bowl.
- Add milk to the flour mixture and mix well. Whisk the egg into the flour-milk mixture and fully incorporate.
- Mix breadcrumbs with oil in a small mixing bowl. Use your hands, if necessary, to help coat the breadcrumbs.
- Drop several onion rings into the batter, turning to coat evenly.
- Remove each ring and shake off excess batter.
- Transfer coated rings into the bowl of oiled breadcrumbs. Coat evenly with breadcrumbs.
- Arrange rings on two baking sheets lined with parchment paper.
- Bake onion rings in the oven until golden brown, about 7 minutes. Turn rings over and cook on second side for approximately 7 minutes more or until golden on both sides.
- Spread rings equally into 6 individual plates and serve with a dipping sauce, such as our Green Goddess Dressing.
Cooking Tip
Place the smallest rings inside the biggest rings on the baking sheet if you need more space. Make sure they are not touching, so they can become nice and crispy.
