Salmon Mousse

Smeared on crackers or bread, this rich and creamy salmon mousse makes for an easy crowd-pleasing appetizer.

Ingredients

1 envelope (1 tablespoon) gelatin, unflavored

¼ cup water

2 (14.75 ounces) cans salmon, drained, bones removed

2 tablespoons  lemon juice

⅓ cup creme fraiche

⅓ cup mayonnaise, homemade or low-sodium store bought

Pinch sea salt

¼ teaspoon black pepper, freshly ground

2 tablespoons pomegranate seeds (optional, included in nutrient analysis)

Crackers or bread of choice (optional, not included in nutrient analysis)

 

Instructions

  1. Stir gelatin into ¼ cup water and allow to sit for a few minutes to thicken.
  2. Combine salmon, lemon juice, crème fraiche, mayonnaise, salt and pepper in a large bowl.
  3. Add the thickened gelatin and mix until fully incorporated.
  4. Cover and chill in the refrigerator for about 1 hour.
  5. When ready to serve, transfer to a serving bowl. Garnish with pomegranate (if using) and serve with crackers or bread (if using).

Cooking Tip

Add a few pinches of curry powder or your favorite low-sodium spices to the salmon mousse for an extra pop of flavor.
