Homemade Crema Mexicana (Crème Fraîche)
This recipe yields a delicious slightly tangy and thick cream that is known in France as crème fraîche. In addition to using in our Rajas Con Crema recipe, you can use this recipe without the lime juice for recipes requiring crème fraiche, or to add to cobbler, baked goods, soups and more!

Ingredients
1 cup whipping cream (8 tablespoons)
2 tablespoons buttermilk
1 tablespoon lime juice
Pinch sea salt
Instructions
- Combine the whipping cream and buttermilk in a glass jar or bowl. Mix well.
- Cover tightly with a lid or plastic wrap. Set at room temperature for 12-24 hours.
- Leave as is for crème fraîche.
- Add lime juice and pinch salt for crema Mexicana and let set 12 more hours. Mix well.
- Serve as condiment for dishes requiring crème fraîche or crema Mexicana, or in recipes requiring either of these!
Cooking Tip
Store refrigerated in sealed jar for up to 10 days.
