Pumpkin Apple Cakes
The hint of pumpkin is very harmonious with the apples in these small cakes. Great for any festive fall occasion.

INGREDIENTS FOR CAKES:
Cooking spray
1 ¼ cup unbleached flour
½ teaspoon baking soda
¼ teaspoon sea salt
1 teaspoon ground cardamom
1 large egg
¾ cup sugar
¾ teaspoon vanilla extract
½ cup pumpkin butter (or canned pumpkin)
¼ cup butter unsalted, melted
¼ cup crème fraîche
¾ teaspoon lemon zest
1 cup Granny Smith apples, chopped
INGREDIENTS FOR ICING:
1 ½ tablespoons milk
1 tablespoon butter, unsalted, melted
½ cup powdered sugar
Special Equipment:
Hand or Stand Mixer
12-cup Muffin Tin

Instructions
DIRECTIONS FOR CAKES:
- Preheat oven to 400°F.
- Grease a 12-count muffin tin with cooking spray.
- Combine flour, baking soda, salt and cardamom to a large mixing bowl. Mix ingredients to combine well. Set aside.
- Beat eggs and sugar together in another large mixing bowl with a stand or electric hand mixer on medium-high speed until mixture is thickened, about 5 minutes.
- Reduce mixer speed to low and add vanilla extract and pumpkin butter. Mix until ingredients are well combined.
- Add butter, creme fraiche, and lemon zest. Beat again on medium speed until well assimilated.
- Add in the flour mixture slowly to the mixing bowl. Mix until a smooth dough is formed.
- Fold in the chopped apples.
- Divide the dough among the muffin cups. Fill each cup until ¾ full.
- Bake for 20 to 25 minutes, until a toothpick inserted in the center comes out clean.
- Cool cakes in the muffin tin for 5 minutes.
- Transfer to a wire rack to cool completely.
DIRECTIONS FOR ICING:
- Combine milk, melted butter, and powdered sugar in a small bowl and mix by hand until smooth.
- Drizzle icing over the cakes and let set for 5 minutes before serving.
Cooking Tip
Add apple cider to the icing for an extra apple flavor.
