Zucchini Bread

Try this simple zucchini bread. Bring this to any party and it will surely be a hit.

Ingredients

3 eggs 

1 ½ cups sugar 

1 cup applesauce 

2 cups zucchini, shredded, with peel 

1 teaspoon pure vanilla 

2 cups bread flour 

¼ teaspoon baking soda 

1 teaspoon cinnamon 

½ teaspoon ground ginger 

1 cup unsalted nuts, coarsely chopped

Instructions

  1. Preheat oven to 375°F. 
  2. Beat eggs in a large bowl.  
  3. Stir sugar, applesauce, zucchini, and vanilla into eggs.  
  4. Sift flour, baking soda, cinnamon, ground ginger and nuts together in a medium bowl.  
  5. Fold dry ingredients into egg mixture and combine just until blended.  
  6. Pour batter into a loaf pan and bake 1 hour.  
  7. Cool on wire rack before cutting into 16 slices. 

Cooking Tip

Shred the zucchini with a grater or a food processor.
