Winter Quinoa Salad
Who said salad has to be boring? This zesty flavored salad celebrates winter citrus in a way that bursts with flavor and can be prepared in a snap!

1 cup tri-color quinoa
2 medium (262 g) Cara Cara or Navel oranges, peeled and segments sliced
½ cup pomegranate seeds
½ cup mint leaves, chopped
1 medium lime, juiced
2 tablespoons olive oil
Instructions
- Cook the quinoa according to package directions. Cool.
- Combine the oranges, pomegranate seeds and mint in a medium serving bowl.
- Add the lime juice and olive oil.
- Mix well and enjoy!
Cooking Tip
Sometimes, when you make quinoa as a side dish, you may have leftovers. This recipe is a great way to use up left-over quinoa. If you only have one cup of left-over cooked quinoa, you can halve the recipe and make 2 servings instead!
