Watermelon Coconut Swirl Popscicles
Watermelon is much more versatile than most people realize. Here is an example of how well it works with tropical ingredients like lime and coconut. This frozen treat will not last long in your freezer once you have tasted it.

1 ½ cups (148 grams) watermelon, cubed
1 tablespoon honey
1 lime, juiced
1 teaspoon lime zest
½ cup coconut milk, fat and liquid whisked together

Instructions
- Combine the watermelon, honey, lime juice and zest in a blender. Blend until smooth.
- Measure 2 tablespoons of watermelon mixture and pour into each popsicle mold.
- Add one tablespoon coconut milk over the watermelon in each mold.
- Add 2 more tablespoons of the watermelon mixture.
- Complete each popsicle with a teaspoon of coconut milk.
- Freeze for 4 hours or overnight.
- Unmold and serve immediately for a great snack or summer dessert.
Cooking Tip
If you do not have popsicle molds, you can pour the mixture into a small, shallow baking or storage dish with a lid and freeze. To serve this way, remove from the freezer, wait 5 to 10 minutes until they soften just enough to cut into bars.
