Upside-Down Pear Pancake
You will never look at pancakes the same after trying this upside-down pear pancake. The natural sweetness of the pears are perfectly complemented by the warming seasonal spices and a light and fluffy batter.

Ingredients
½ cup unbleached flour
½ teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
1 large egg, room temperature
¼ cup milk or milk alternative
1 tablespoon maple syrup
1 teaspoon butter
1 (178 grams) medium pear, sliced thinly
1 tablespoon confectioners’ sugar
Instructions
1. Preheat the oven to 375°F.
2. Whisk flour, baking powder, cinnamon, nutmeg and cloves in a large bowl. Set aside.
3. Combine eggs, milk and maple syrup in a separate bowl. Whisk to combine thoroughly.
4. Pour egg mixture into dry ingredients. Stir until just combined.
5. Melt butter in a small ovenproof skillet over medium-low heat.
6. Add pear slices in a single, attractively arranged layer. Cook for 5 minutes.
7. Spread prepared batter over pears.
8. Cover and cook over medium heat until top is set, about 5 minutes.
9. Transfer pan to oven. Bake until the edges are lightly brown, about 8 to 10 minutes.
10. Invert onto a serving plate.
11. Sprinkle each portion with confectioners’ sugar. Serve warm.
Cooking Tip
This upside-down pancake works best with a firm pear, not one that is fully ripe.
