You’ll feel like you are eating a burger in a bowl with this hearty soup that makes a filling lunch or dinner. To keep sodium levels low, be sure to drain the liquids from the tomatoes before adding them to the pot. The combination of basil, oregano, and thyme creates a flavorful trio that the whole family will enjoy.

Ingredients

2 tablespoons extra‑virgin olive oil

1 pound ground turkey breast

½ sweet onion, chopped

3 cloves of garlic, minced

Black pepper, freshly grounded, to taste

1 (16-ounce) can low-sodium diced tomatoes, drained

4 cups low‑sodium chicken broth or chicken stock

1 cup carrots, sliced

1 cup celery, sliced

1 tablespoon fresh basil, chopped

1 tablespoon fresh oregano, chopped

1 tablespoon fresh thyme, chopped

Instructions

  1. In a medium stockpot over medium-high heat, heat the olive oil. Add the turkey, onion, and garlic, and cook, stirring frequently, until the turkey is browned. Season with pepper.
  2. Add the drained tomatoes, broth, carrots, celery, basil, oregano, and thyme. Reduce the heat to low, and simmer for 20 minutes. Serve.

Cooking Tip

If you don’t have fresh basil, oregano, or thyme, use dried instead. Substitute 1 teaspoon of dried herbs for each tablespoon of fresh.

If you want to lower the sodium further, consider making your own ‘Simple Chicken Broth‘ for more control over the ingredients.
