Prep time: 15 min
Chill time: 2 hrs

These frozen yogurt snacks are the perfect fruity frozen treat. They are easy to whip up and healthy, charged with vitamins and protein. You might just want a batch in your freezer all summer long.

Makes

8 servings

Serving size

1, 3-ounce popsicle or bar

Ingredients

¼ cup heavy cream

8-ounces Greek yogurt, whole fat

½ tablespoon honey

¼ cup coconut flakes

¼ cup chocolate chips

⅓ cup pineapple chunks

⅓ cup mango chunks

½ kiwi (34 grams), sliced

Special Equipment:

Ice pop molds or container with lid

Instructions

  1. Beat the heavy cream in a small bowl until thick and creamy.
  2. Combine the yogurt and remaining ingredients, except for the kiwi, in a medium-sized bowl.
  3. Fold the whipped cream into the yogurt mixture.
  4. Pour the mixture into ice pop mold (or a container with a lid), spreading evenly into about 1-inch thickness.
  5. Arrange the kiwi slices evenly on top.
  6. Cover and freeze for about 2 hours, until hardened.
  7. Serve individual pops after running plastic mold under warm water so it will slide out more easily.
  8. Serve bars by removing container from the freezer 10 minutes prior to serving.
  9. Using a wet knife, slice any leftovers into “bars” and serve immediately.

Cooking Tip

You can change up the fruit all summer long, based on what is in season.
