Tropical Slaw

This colorful and flavorful slaw can provide most of the colors in the vegetable ‘rainbow’ and hence, all the phytochemicals associated with each color.

1 cup red cabbage, shredded

1 cup white cabbage, shredded

1 medium (336 grams) mango, peeled and sliced into matchsticks

1 medium (178 grams) pear, firm, shredded

1 medium (61 grams) carrot, shredded

1 lime, juiced

1 teaspoon rice vinegar

2 tablespoons sunflower oil

Instructions

  1. Combine the red cabbage, white cabbage, mango, pears and carrots in a large mixing bowl.
  2. Add the lime juice, vinegar and sunflower oil.
  3. Mix very well.
  4. Serve as a side dish.
