Tropical Slaw

This colorful and flavorful slaw can provide most of the colors in the vegetable ‘rainbow’ and hence, all the phytochemicals associated with each color.

Ingredients
1 cup red cabbage, shredded
1 cup white cabbage, shredded
1 medium (336 grams) mango, peeled and sliced into matchsticks
1 medium (178 grams) pear, firm, shredded
1 medium (61 grams) carrot, shredded
1 lime, juiced
1 teaspoon rice vinegar
2 tablespoons sunflower oil
Special Equipment:
Vegetable shredding tool
Instructions
- Combine the red cabbage, white cabbage, mango, pears and carrots in a large mixing bowl.
- Add the lime juice, vinegar and sunflower oil.
- Mix very well.
- Serve as a side dish.
Cooking Tip
This recipe can be made in no-time by using packaged, pre-shredded cabbage or cabbage with carrots. Additionally, the shredding tool is inexpensive and allows for making quick work of shredding any root vegetable, cabbages, jicama etc.
