Tropical Cheesy Fruit Salad

Creamy mascarpone mixed with sweet tropical fruit, a kiss of cinnamon, chewy marshmallows and bright mint. Not too sweet and it satisfies a sweet craving.

Makes

8 (½ cup) or 4 (1 cup) servings

Serving size

½ cup as a side or 1 cup as a dessert/snack

Ingredients

8 ounce tub of mascarpone cheese

½ teaspoon ground cinnamon

1 teaspoon sugar

¼ teaspoon ground nutmeg

2 to-go cups of mandarin slices, juice packed. Reserve 2 tablespoons of juice from one container

⅓ cup maraschino cherries, juice packed, cut in half. Reserve 2 tablespoons of the juice.

½ cup canned crushed pineapple, do not drain

1 cup mango, cut into small chunks (may use frozen, thawed)

1 cup mini marshmallows (may use gluten free)

¼ cup fresh mint, chopped

Instructions

  1. Beat the mascarpone with cinnamon, sugar, nutmeg, mandarin juice, and cherry juice until smooth, about 1 to 2 minutes.
  2. Stir the mandarin, cherries, pineapple and mango into the cheese mixture.
  3. Stir in the marshmallows, then the mint.
  4. Serve ½ cup per person as a side dish or 1 cup as a snack or dessert.

Cooking Tip

May sub crème fraiche, sour cream, Greek yogurt, or Neufchatel for the mascarpone.
