Honey is naturally acidic, so the simple rub used for this salmon creates tender flesh and a lovely golden crust. Different types of honey will impart unique flavors to the fish, such as a floral accent from clover honey or a more robust taste from buckwheat honey.

Ingredients

2 tablespoons honey

1 teaspoon lemon zest

½ teaspoon freshly ground black pepper

4 (3-ounce) salmon fillets

1 tablespoon olive oil

½ scallion, white and green parts, chopped

Instructions

  1. In a small bowl, stir together the honey, lemon zest, and pepper.
  2. Wash the salmon and pat dry with paper towels.
  3. Rub the honey mixture all over each fillet.
  4. In a large skillet over medium heat, heat the olive oil.
  5. Add the salmon fillets and cook the salmon for about 10 minutes, turning once, or until it is lightly browned and just cooked through.
  6. Serve topped with chopped scallion.

Cooking Tip

The trick to a perfect coating is to pat the fish completely dry before applying the honey. You can increase the amount of protein in this dish by eating 4 ounces of salmon instead of 3 ounces.
