Sunshine Eggs

Brighten up your morning with some beautiful sunshine eggs! The fluffy egg whites are light but filling and are sure to bring a smile to everyone at the table.

Cooking spray
3 medium eggs
⅓ cup parmesan cheese (low sodium), grated
Special Equipment:
Electric hand mixer
Baking sheet
Parchment paper
Instructions
- Preheat oven to 425°F.
- Line a baking pan with parchment paper and spray with cooking spray.
- Separate the egg yolks from the whites and place each yolk in a separate cup or tiny bowl.
- Place the egg whites in a clean medium mixing bowl.
- Beat the egg whites with an electric stand or hand mixer. Begin on low speed. Increase speed slowly as the whites start to thicken.
- Continue beating until stiff peaks form.
- Fold in the grated cheese, taking care not to deflate the egg whites.
- Create three mounds of the egg white mixture on the prepared baking sheet. Form the mounds so they look like nests, with indentations in the centers.
- Place in the oven for 3 minutes. After 3 minutes, remove the egg white nests from the oven.
- Place an egg yolk gently onto the center of each nest.
- Return to the oven and bake for an additional 2 minutes.
- Remove and serve immediately.
Cooking Tip
When cooking the eggs in the oven, make sure to place the baking pan on the middle rack so the whites of the eggs stay white and bright.
