Strawberry Sesame Milkshake
This is a very unusual combination of fruit and tahini. Because the strawberries are roasted and mixed with balsamic, their flavor is very pronounced. It makes a delicious afternoon pick-me-up snack or even a dessert on a hot day.

1 pound strawberries, halved
2 tablespoons balsamic glaze
½ small (50 grams) banana, frozen
½ cup coconut milk
2 tablespoons tahini
1 cup ice cubes
½ tablespoon sesame seeds, toasted

Instructions
- Preheat oven to 400°F.
- Toss strawberries with balsamic glaze in a bowl.
- Spread onto a parchment-lined baking sheet. Set aside for 5 minutes.
- Roast 10 minutes. Remove from the oven. Turn over strawberries and roast for an additional 10 minutes or until they are softened. Cool.
- Combine strawberries (save 3 for garnish), banana, coconut milk, tahini, and ice in a blender. Blend until smooth.
- Pour smoothies into three glasses. Top with dried strawberry and toasted sesame seeds.
Cooking Tip
You can roast the strawberries in advance, they will keep in a sealed container in the refrigerator overnight.
