Strawberry Fool

A great summer dessert to nip those sweet cravings in the bud.

Serving size

¾ cup

Ingredients

4 cups strawberries, sliced (about 1 ¼ pounds)

¼ cup sugar substitute (granulated, brown)

2 teaspoons vanilla extract

1 package (8 ounces) reduced-fat cream cheese, softened

2 cups reduced-fat, frozen whipped topping

6 strawberries, for garnish

Mint sprigs

Instructions

  1. Combine sliced strawberries, sugar substitute, and vanilla.
  2. Crush berries with a potato masher or whisk.
  3. Set aside for 10 to 15 minutes to allow juices to release.
  4. Beat cream cheese with an electric mixer until light and fluffy.
  5. Gently fold whipped topping into cream cheese, 1 cup at a time until light.
  6. Add strawberry mixture and fold in gently.
  7. Spoon mixture evenly into 6 dessert glasses.
  8. Garnish with a fresh strawberry and mint sprigs.

Cooking Tip

Use 1 tablespoon orange liqueur or orange extract for an added fruity flavor.
