This dessert in a glass tastes every bit as delicious as it sounds. Strawberries emerge in spring, just when we need them most. They serve as an excellent detoxifier and help support the kidneys, liver, and spleen. Loaded with as much vitamin C as oranges, strawberries make a welcome addition to a diet any time of year.

Makes

2 servings

Serving size

1 serving

Ingredients

1 cup unsweetened rice milk (see tip)

1 cup strawberries, hulled

2 tablespoons cream cheese, at room temperature

½ teaspoon honey

1 teaspoon vanilla extract

3 to 5 ice cubes

Instructions

  1. In a blender, combine the rice milk, strawberries, cream cheese, honey, vanilla, and ice cubes. Process until smooth, and serve.

Cooking Tip

Make your own cheesecake smoothie by substituting another favorite fruit for the strawberries. Blackberries, blueberries, and raspberries all work nicely in this treat. To learn how to make your own rice milk, check out this ‘Homemade Rice Milk ‘ recipe!
