Stewed Cinnamon Apples
This is the perfect fall recipe to put those extra apples from the orchard to use. Apples can add fiber to a diet without extra potassium – so this is the perfect dessert for those of who are on a strict low potassium diet. The apples are also delicious for breakfast served over oatmeal, pancakes, waffles or granola.

1 tablespoon vegan butter
4 medium apples, peeled, cored and cut into eight wedges
1 teaspoon ground cinnamon
¼ cup of water
1 tablespoon Greek or frozen vanilla yogurt (optional, not included in nutritional analysis)
Instructions
- Heat the butter in a large sauté pan over medium heat.
- Add the apples and cinnamon and stir to coat.
- Add the water and reduce the heat to a low simmer. Cook the apples until tender, 5-7 minutes.
- Cool slightly and serve warm apples over Greek or frozen yogurt (if using).
