Spiced French Toast

The most distinct spice in this dish is cinnamon. This spice is gaining prominence for its positive effect on glucose levels in the body, and has healing properties that come from the essential oils found in cinnamon bark.

Cinnamon is also an excellent source of calcium, iron, manganese, and vitamins C, E, and K. Luckily for us, it’s delicious too, so what better way to enjoy it than with some delicious French toast?

Ingredients

4 eggs

½ cup Homemade Rice Milk (or use unsweetened store-bought) or almond milk

¼ cup freshly squeezed orange juice

1 teaspoon ground cinnamon

½ teaspoon ground ginger

Pinch of ground cloves

1 tablespoon unsalted butter, divided

8 slices white bread

Instructions

  1. In a large bowl, whisk together the eggs, rice milk, orange juice, cinnamon, ginger, and cloves until well blended.
  2. In a large skillet over medium-high heat, melt half the butter.
  3. Dredge four of the bread slices in the egg mixture until well soaked, and place them in the skillet.
  4. Cook until golden brown on both sides, turning once, about 6 minutes total.
  5. Repeat with the remaining butter and bread.
  6. Serve 2 pieces of hot French toast to each person.

Cooking Tip

French toast can easily be made in the oven if you don’t want to spend time standing over a skillet. Dredge the bread slices the evening before, and place on a baking sheet in the refrigerator overnight, covered. In the morning, uncover, then pop the pan into a preheated 350˚F oven and bake for about 10 minutes, turning once.
