Shiitake, Soba Noodles and Miso Bowl
Here is a perfect example of an ‘instant’ scratch cooked meal. This recipe is so easy and satisfying, it will become a ‘go to’ meal when you are very hungry but short on time.
Makes
Serving size
Ingredients
3 cups water
½ cup shiitake mushrooms, dried
4 ounces soba noodles
1 tablespoon white miso
Instructions
- Boil the water in a medium saucepan over high heat.
- Add the mushrooms and cook until softened and swollen, about 6 minutes.
- Add the noodles and cook until al dente.
- Ladle about ¼ cup of noodle broth into a liquid measuring cup.
- Add the miso into the cup and mix thoroughly with a whisk or fork.
- Pour the miso mixture back into the saucepan. Serve in bowls and enjoy!
Cooking Tip
To fully enjoy the health benefits of miso, whisk it in after the broth has cooled off a bit from its boiling temperature. This prevents the high temperature from killing the probiotics.
