Savory Breakfast Bars

Sometimes you just don’t want to start the day with something sweet, but you are going to be on the go. So, take the time to make these savory bars and you’ll have portable savory goodness for a week.

Ingredients

1 cup rolled oats, toasted
½ cup crisp rice cereal
½ cup parmesan, grated
½ cup nori, cut into pieces with scissors
⅛ teaspoon liquid smoke

⅓ cup almonds, raw chopped

⅓ cup cranberries, dried
½ teaspoon smoked paprika (swap in cumin, chili or garlic powder)
½ teaspoon black pepper, freshly ground
2 large egg whites, beaten
½ cup sunflower butter, unsweetened

½ teaspoon kosher salt (optional, not included in nutrient analysis)

Instructions

  1. Preheat oven to 350°F.
  2. Line 8-inch by 8-inch baking pan with foil or parchment grease foil.
  3. Combine rolled oats, rice cereal, parmesan, nori, liquid smoke, almonds, cranberries smoked paprika, salt (if using) and pepper in a mixing bowl.
  4. Stir in egg whites and unsweetened sunflower butter. Mix thoroughly.
  5. Press ingredients firmly into the baking pan.
  6. Bake for 30 minutes.
  7. Cool on a wire rack.
  8. Remove from pan and cut into 8 bars.
  9. Store in an airtight container at room temperature up to 1 week.

Cooking Tip

Freeze these small bundles of goodness and they can last a couple months. Freeze individually for healthy snacks on the run!
