Root and Fruit Bowl

Ingredients
½ teaspoon lime zest
½ teaspoon orange zest
1 teaspoon cumin
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon white pepper
¼ teaspoon kosher salt
1 tablespoon lime juice
1 tablespoon orange juice
1 teaspoon maraschino cherry juice (from jar)
2 tablespoons fresh basil, chopped
2 tablespoons olive oil
1 cup sweet potatoes, chopped small
4 strips Lightlife® smokey vegan tempeh bacon, chopped
1 ½ cups carrots, sliced small
1 ¼ cups parsnips, sliced small
Flesh of ½ of the orange, chopped
6 jarred maraschino cherries, chopped
Instructions
- Place lime zest, orange zest, cumin, cinnamon, nutmeg, white pepper, salt, lime juice, orange juice, cherry juice and 1 ½ tablespoons of the oil into a sealable jar or container. Shake well and set aside.
- Boil the sweet potatoes for 10 minutes.
- In a large pan, over medium heat, add the remaining ½ tablespoon of oil. When oil is hot, add the bacon. Cook 2 to 3 minutes or until bacon is browned. Remove from heat and set aside.
- Add the carrots and parsnips to the potatoes and boil for 5 minutes more. Using a fork, make sure the vegetables are tender-crisp.
- Drain and run under cold water for 1 minute. Drain well.
- In a large bowl, place the vegetables, bacon, oranges, cherries and basil. Mix well.
- Give the jar a good shake to emulsify then pour over top and toss well to combine.
- Serve 1 cup per person.
Cooking Tip
Flavor is greater when using mandarin oranges.
