Roasted Brussels Sprouts

This quick, easy and delicious brussels sprouts dish will make you forget about every bitter brussels dish you have had in the past.

Ingredients
1-pound brussels sprouts
1 tablespoon extra-virgin olive oil
Freshly ground black pepper, to taste (optional, not included in nutritional analysis)
2 tablespoons parmesan cheese, grated (optional, not included in nutritional analysis)
½ lemon, juiced (optional, not included in nutritional analysis)
Instructions
- Preheat oven to 400°F.
- Trim the brown ends of the brussels sprouts and remove any discolored outer leaves.
- Place the brussels sprouts on a baking sheet with olive oil and pepper (if using), and toss to coat.
- Roast until slightly browned and crispy, 15-20 minutes, shaking pan halfway through roasting. Or, leave them in for an additional 10 minutes for really crispy version.
- Sprinkle with Parmesan cheese (if using) and drizzle with lemon juice (if using).
Cooking Tip
Save any extras for a roasted veggie bowl or salad the next day.
