Roasted Brussels Sprouts

This quick, easy and delicious brussels sprouts dish will make you forget about every bitter brussels dish you have had in the past.

Ingredients

1-pound brussels sprouts

1 tablespoon extra-virgin olive oil

Freshly ground black pepper, to taste (optional, not included in nutritional analysis)

2 tablespoons parmesan cheese, grated (optional, not included in nutritional analysis)

½ lemon, juiced (optional, not included in nutritional analysis)

Instructions

  1. Preheat oven to 400°F.
  2. Trim the brown ends of the brussels sprouts and remove any discolored outer leaves.
  3. Place the brussels sprouts on a baking sheet with olive oil and pepper (if using), and toss to coat.
  4. Roast until slightly browned and crispy, 15-20 minutes, shaking pan halfway through roasting. Or, leave them in for an additional 10 minutes for really crispy version.
  5. Sprinkle with Parmesan cheese (if using) and drizzle with lemon juice (if using).

Cooking Tip

Save any extras for a roasted veggie bowl or salad the next day.
