Ingredients

½ small cooked beet, peeled and chopped

1 pear, cored and chopped

½ orange, peeled and chopped

1 cup Homemade Rice Milk (or use unsweetened store-bought)

2 teaspoons flaxseed

1 teaspoon fresh ginger, peeled and grated

3 ice cubes

Instructions

  1. Place the beet, pear, orange, rice milk, flaxseed, and ginger in a blender, and blend until smooth.
  2. Add the ice cubes, and blend until thick and smooth.
  3. Pour into two tall glasses and serve immediately.

Cooking Tip

Beets come in an assortment of vibrant colors, such as yellow, deep red, and dark purple, which can all create a pretty smoothie. Red beets will make a pastel pink beverage, but the nutrition content is similar in all beets, so experiment with what’s fresh and available.
