Pretty Pink Smoothie
Flaxseed add an interesting texture to this smoothie, so if you like a velvety texture, reduce this ingredient to 1 teaspoon instead. Flaxseed are extremely high in omega-3 fatty acids, and are considered the best food source of this important nutrient.

½ small cooked beet, peeled and chopped
1 pear, cored and chopped
½ orange, peeled and chopped
1 cup Homemade Rice Milk (or use unsweetened store-bought)
2 teaspoons flaxseed
1 teaspoon fresh ginger, peeled and grated
3 ice cubes
Instructions
- Place the beet, pear, orange, rice milk, flaxseed, and ginger in a blender, and blend until smooth.
- Add the ice cubes, and blend until thick and smooth.
- Pour into two tall glasses and serve immediately.
Cooking Tip
Beets come in an assortment of vibrant colors, such as yellow, deep red, and dark purple, which can all create a pretty smoothie. Red beets will make a pastel pink beverage, but the nutrition content is similar in all beets, so experiment with what’s fresh and available.
