Pork with Glazed Plums
Plum preserves and balsamic vinaigrette combine to make a delicious, mildly sweet and savory glaze on top of your pork tenderloins.

Ingredients
¼ teaspoon ground pepper
1 ¼ pounds pork tenderloin
1 tablespoon olive oil
½ red onion, sliced
2 medium plums, quartered
2 tablespoons balsamic vinegar
2 tablespoons plum preserves
¼ teaspoon dried thyme
Instructions
- Preheat oven to 400°F.
- Sprinkle pepper on pork. Heat oil in a large ovenproof skillet and cook pork on high for 3 to 4 minutes until brown on all sides.
- Add onion and plums. Bake for 15 minutes or until it reaches 145°F in the thickest part.
- Transfer to a serving platter. Add balsamic vinegar, plum preserves, and thyme to drippings in the pan.
- Cook for 3 to 5 minutes over medium-high heat until slightly thickened. Pour over pork and serve.
Cooking Tip
Serve with a side of freshly roasted green beans.
