Piquillo Pepper Hummus
Piquillo peppers have a distinctive flavor that brings a tangy twist to delicious hummus.

Ingredients
1 ⅔ cup (252 grams) chickpeas, canned, drained and rinsed
11 whole (176 grams) piquillo peppers, jarred or canned and drained
3 tablespoons olive oil
2 tablespoons tahini
½ medium lemon, juiced (about 2 tablespoons)
1 clove garlic
1 teaspoon paprika
½ teaspoon cumin, ground
⅛ teaspoon sea salt
2-3 tablespoons water (as needed)

Instructions
- Combine all the ingredients except the water and one of the piquillo peppers, in a food processor or blender.
- Process until smooth and creamy.
- Add water, 1 tablespoon at a time as needed, for a smoother consistency.
- Mince reserved piquillo pepper for garnish.
- Serve hummus in a bowl topped with the minced piquillo pepper.
Cooking Tip
If using canned chickpeas, choose “low sodium” or “no salt added” to avoid excess sodium.
