Pesto Pork Chops
Pork, sometimes called “the other white meat,” can be compared to chicken in terms of nutrition benefits. Pork is higher in protein and lower in cholesterol than chicken, and it has about the same number of calories per serving. Cooking pork chops in a coating of bread crumbs seals in the flavor and tasty juices, so the meat will never be dry.

4 (3-ounce) pork top-loin chops, boneless, fat trimmed
8 teaspoons Herb Pesto, divided
½ cup bread crumbs
1 tablespoon olive oil
Instructions
- Preheat the oven to 450°F.
- Line a baking sheet with foil; set aside.
- Rub 1 teaspoon of pesto evenly over both sides of each pork chop.
- Lightly dredge each pork chop in the bread crumbs.
- In a large skillet over medium-high heat, heat the oil.
- Brown the pork chops on each side for about 5 minutes.
- Place the pork chops on the baking sheet.
- Bake for about 10 minutes or until the pork reaches 145°F in the center.
