Ingredients

1 peach, peeled, pitted, and diced into ½-inch cubes

1 English cucumber, diced into ½-inch cubes

½ cup cherry tomatoes, halved

1 scallion, white and green parts, chopped

½ cup fresh mint leaves, chopped

1 tablespoon freshly squeezed lime juice

4 cups mixed baby greens

Black pepper, freshly grounded, to taste

Instructions

  1. In a large bowl, toss together the peach, cucumber, tomatoes, scallion, mint, and lime juice.
  2. Arrange the greens on four plates, and top with the peach mixture.
  3. Season the salad with pepper, and serve.

Cooking Tip

When choosing peaches for recipes such as this one, look for ripe but still-firm fruit. Ripe peaches are incredibly tasty, but when diced and tossed with other ingredients, they tend to get mushy.
