Play around with different types of microgreens until you find one you really like. Spicy blends can be fun for a sandwich like this, or use baby salad greens for something milder.

Ingredients

1 multigrain bagel, halved

2 tablespoons cream cheese, divided

2 slices tomato

1 slice red onion

Black pepper, freshly grounded, to taste

1 cup microgreens

Instructions

  1. In a toaster or oven, lightly toast the bagel.
  2. Spread 1 tablespoon of cream cheese on each of the bagel halves, and top each half with 1 slice of tomato and a couple rings of onion. Season with the black pepper.
  3. Top each half with ½ cup of microgreens and serve.

Cooking Tip

Swap out the red onion for scallions or chives, the tomato for red bell pepper strips, or the microgreens for sprouts as needed to fit what you have on hand.

You can also substitute the cream cheese with feta or brie; just be sure to keep the portion size around 1 tablespoon per serving.
