Oat Pancakes with Fruit
Oat pancakes are filling and nutritious. These pancakes are mixed with oats and fruits for a fruity pancake great for a brunch on a weekend.

4 ounces fruit cocktail
1 teaspoon lemon zest
½ cup rolled oats
2 tablespoons heavy cream plus ½ cup water, mixed
1 large egg
½ tablespoon brown sugar
½ teaspoon vanilla
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ cup flour

Food processor or blender
Instructions
- Add fruit cocktail to a food processor or blender. Blend until small bits remain but not quite pureed. If needed, add 1 or 2 tablespoons of the cream-water mixture to help it blend.
- Mix with the lemon zest and set aside.
- Combine the oats with the cream-water mixture and let stand 1 minute.
- Stir in the egg until well blended.
- Add the brown sugar and vanilla and stir to mix well.
- Add the baking powder, cinnamon, nutmeg, and flour. Stir, just to moisten the dry ingredients.
- Add the fruit cocktail and zest mixture and stir to combine.
- Heat a small pan over medium-low heat. When heated, spray with olive oil.
- Drop ¼ cup of batter into the pan and spread it out a little bit.
- Let cook about 2 minutes or until the edges are dry and you can slide the spatula underneath without breaking the pancake.
- Flip and cook 1 to 2 minutes or until browned. If browning too fast, lower the heat. Make sure to slide your spatula fully under the pancake. These are slightly delicate and can break if not fully supported underneath.
- Spray pan again with olive oil, then repeat with remaining batter.
- Serve 2 pancakes and top with syrup (if desired).
Cooking Tip
Pancakes will have a touch of moisture in the middle. You can serve these pancakes with fresh fruits of your choosing.
