No Bake Biscoff® Cookies

Chewy oats and a beautiful cookie butter flavor. Strong caramel notes push this little bite over the edge to perfection.

Serving size

1 biscoff cookie

Ingredients

1 ½ cup dry quick oats

4 tablespoons oat bran

4 tablespoons Swerve® granulated sweetener

4 tablespoons granulated sugar (or more Swerve®)

6 tablespoons Biscoff® cookie butter

4 tablespoons unsalted butter, melted

2 tablespoons heavy cream

2 tablespoons warm water

½ teaspoon vanilla

Instructions

  1. Combine the oats, bran, sweetener and sugar together. Set aside.
  2. In a bowl, mix the cookie butter, unsalted butter, heavy cream, water and vanilla until liquid is shiny and few lumps of butter are left.
  3. Stir the mixture into the dry ingredients until well combined.
  4. Scoop 1 tablespoon onto a baking sheet lined with parchment.
  5. Freeze for 30 minutes or chill for 60 minutes.
  6. Keep cool. Cookies will soften as they remain at room temperature.

Cooking Tip

Substitute a nut butter for the cookie butter. Add 3 tablespoons unsweetened cocoa powder to the dry mix.
