Mixed-Grain Hot Cereal

The portion size of this hearty breakfast is quite small, but this cereal, combined with a piece of fruit, will keep you going from morning until lunch. Bulgur wheat is high in fiber, low in fat, and offers a nice nutty taste. Serve this cereal topped with syrup, unsalted butter, or a sprinkle of brown sugar.

Ingredients

2¼ cups water

1¼ cups vanilla rice milk

6 tablespoons uncooked bulgur

2 tablespoons uncooked whole buckwheat

1 cup apple, peeled and sliced

6 tablespoons plain uncooked couscous

½ teaspoon ground cinnamon

Instructions

  1. In a medium saucepan over medium-high heat, heat the water and rice milk.
  2. Bring to a boil, and add the bulgur, buckwheat, and apple.
  3. Reduce the heat to low and simmer, stirring occasionally, for 20 to 25 minutes or until the bulgur is tender.
  4. Remove the saucepan from the heat and stir in the couscous and cinnamon.
  5. Let the saucepan stand, covered, for 10 minutes, then fluff the cereal with a fork before serving.
