Mixed-Grain Hot Cereal
The portion size of this hearty breakfast is quite small, but this cereal, combined with a piece of fruit, will keep you going from morning until lunch. Bulgur wheat is high in fiber, low in fat, and offers a nice nutty taste. Serve this cereal topped with syrup, unsalted butter, or a sprinkle of brown sugar.

2¼ cups water
1¼ cups vanilla rice milk
6 tablespoons uncooked bulgur
2 tablespoons uncooked whole buckwheat
1 cup apple, peeled and sliced
6 tablespoons plain uncooked couscous
½ teaspoon ground cinnamon
Instructions
- In a medium saucepan over medium-high heat, heat the water and rice milk.
- Bring to a boil, and add the bulgur, buckwheat, and apple.
- Reduce the heat to low and simmer, stirring occasionally, for 20 to 25 minutes or until the bulgur is tender.
- Remove the saucepan from the heat and stir in the couscous and cinnamon.
- Let the saucepan stand, covered, for 10 minutes, then fluff the cereal with a fork before serving.
