Menudo is a traditional Mexican soup made with tripe and a red chili pepper base. This recipe also contains pig feet for some additional protein.

Ingredients

4 pounds beef tripe 

2 pounds fresh pigs’ feet, rinsed 

5 cloves garlic, crushed 

5 dried red chiles 

1 ½ teaspoons salt 

20-ounce can hominy, rinsed and drained 

1 cup onion, chopped 

1 teaspoon oregano leaves, chopped 

Lemons as desired 

Instructions

  1. Wash tripe and trim off as much fat as possible. Cut into 1-inch pieces. 
  2. Simmer for 30 minutes in water and drain.  
  3. Place tripe, pigs’ feet, and garlic in a pot. 
  4. Add water to cover and simmer for 2 hours.  
  5. Blend chiles with 1 cup water until smooth.  
  6. Add salt and hominy to the tripe mixture.  
  7. Continue to simmer another 30 minutes.  
  8. Garnish with chopped onion, oregano, and lemons. 

Cooking Tip

Serve and enjoy with warm corn tortillas.
