Menudo
Menudo is a traditional Mexican soup made with tripe and a red chili pepper base. This recipe also contains pig feet for some additional protein.

Ingredients
4 pounds beef tripe
2 pounds fresh pigs’ feet, rinsed
5 cloves garlic, crushed
5 dried red chiles
1 ½ teaspoons salt
20-ounce can hominy, rinsed and drained
1 cup onion, chopped
1 teaspoon oregano leaves, chopped
Lemons as desired
Instructions
- Wash tripe and trim off as much fat as possible. Cut into 1-inch pieces.
- Simmer for 30 minutes in water and drain.
- Place tripe, pigs’ feet, and garlic in a pot.
- Add water to cover and simmer for 2 hours.
- Blend chiles with 1 cup water until smooth.
- Add salt and hominy to the tripe mixture.
- Continue to simmer another 30 minutes.
- Garnish with chopped onion, oregano, and lemons.
Cooking Tip
Serve and enjoy with warm corn tortillas.
