Marinated Cucumber and Celery Salad

A bright and crisp cucumber and celery salad that has tons of flavor and is simple to make. Top it with your favorite protein to make it a complete and filling meal.

2 cups cucumber, halved lengthwise and thinly sliced

1½ cup celery, thinly sliced

2 tablespoons shallot, minced

½ cup parsley, chopped

3 ounces green olives, chopped

1 tablespoon apple cider vinegar

2 tablespoons lemon juice

1 tablespoon lemon zest

1 tablespoon extra virgin olive oil

⅛ teaspoon salt

⅛ teaspoon black pepper

When using parsley, reduce food waste by chopping up both the stems and leaves. The stems have great flavor and add more texture to the dish. Just be sure to avoid any large, tough stems.
