Mango Plus Smoothie

This is a surprisingly quick and delicious smoothie with a hint of peanut for a slightly earthy taste.

Serving size

about 1 ¼ cups (10 ounces)

Ingredients

1 cup mango, fresh or frozen

2½ cups (2 ounces) kale, chopped

2 tablespoons peanut butter

1 cup oat milk

Special Equipment:

Electric blender

Instructions

  1. Combine all the ingredients into a blender.
  2. Blend on very high speed for 1 to 2 minutes or until very smooth.
  3. Pour into two tall glasses and serve.

Cooking Tip

If you do not have a high-speed blender, blend for a full 2 minutes. If making this for one person, the smoothie can be stored in a sealed container overnight.
