Linguine with Roasted Red Pepper-Basil Sauce

Fresh basil imparts a wonderful aroma and flavor to this simple dish. This popular herb’s oils and extracts are said to have antioxidant and antibacterial properties. Two of the vitamins it offers are vitamin A and blood-clotting vitamin K.

Ingredients

8 ounces uncooked linguine

1 teaspoon olive oil

½ sweet onion, chopped

2 teaspoons minced garlic

1 cup chopped roasted red bell peppers

1 teaspoon balsamic vinegar

¼ cup shredded fresh basil

A pinch red pepper flakes

Freshly ground black pepper, to taste

4 teaspoons grated low-fat Parmesan cheese, for garnish

Instructions

  1. Cook the pasta according to the package instructions.
  2. While the pasta is cooking, place a large skillet over medium-high heat and add the olive oil.
  3. Sauté the onions and garlic for about 3 minutes or until they are softened.
  4. Add the red pepper, vinegar, basil, and red pepper flakes to the skillet and stir for about 5 minutes or until heated through.
  5. Toss the cooked pasta with the sauce and season with pepper.
  6. Serve topped with Parmesan cheese.

Cooking Tip

When cooking with basil, add it to the dish at the end to retain the best color and maximum flavor.
