Linguine with Roasted Red Pepper-Basil Sauce

Fresh basil imparts a wonderful aroma and flavor to this simple dish. This popular herb’s oils and extracts are said to have antioxidant and antibacterial properties. Two of the vitamins it offers are vitamin A and blood-clotting vitamin K.

Ingredients
8 ounces uncooked linguine
1 teaspoon olive oil
½ sweet onion, chopped
2 teaspoons minced garlic
1 cup chopped roasted red bell peppers
1 teaspoon balsamic vinegar
¼ cup shredded fresh basil
A pinch red pepper flakes
Freshly ground black pepper, to taste
4 teaspoons grated low-fat Parmesan cheese, for garnish
Instructions
- Cook the pasta according to the package instructions.
- While the pasta is cooking, place a large skillet over medium-high heat and add the olive oil.
- Sauté the onions and garlic for about 3 minutes or until they are softened.
- Add the red pepper, vinegar, basil, and red pepper flakes to the skillet and stir for about 5 minutes or until heated through.
- Toss the cooked pasta with the sauce and season with pepper.
- Serve topped with Parmesan cheese.
Cooking Tip
When cooking with basil, add it to the dish at the end to retain the best color and maximum flavor.
