Lime Baked Haddock
Limes look like little green lemons, and they come from the same family as their bigger yellow cousins, but limes have a unique taste that enhances the fish in this dish.
Baking the fish directly on sliced limes is a healthy option because the pith— the white section between the flesh and rind—contains high amounts of limonene, a powerful phytonutrient. Limes can help reduce the risk of cancer and are an efficient detoxifier, important for kidney health.

4 (3-ounce) haddock fillets, patted dry
Black pepper, freshly grounded, to taste
Olive oil cooking spray
3 limes, thinly sliced
1 tablespoon olive oil
3 tablespoons almonds, crushed
2 teaspoons fresh dill, chopped
Instructions
- Preheat the oven to 400°F.
- Lightly season the fish with pepper.
- Lightly coat a 9-by-9-inch baking dish with cooking spray.
- Lay the lime slices in the bottom of the baking dish, and arrange the fish fillets on top.
- Brush the fish with the olive oil, and sprinkle them with the almonds.
- Bake the fish until just cooked through and the almonds are golden, about 10 minutes.
- Serve with the chopped dill.
