Baking the fish directly on sliced limes is a healthy option because the pith— the white section between the flesh and rind—contains high amounts of limonene, a powerful phytonutrient. Limes can help reduce the risk of cancer and are an efficient detoxifier, important for kidney health.

Ingredients

4 (3-ounce) haddock fillets, patted dry

Black pepper, freshly grounded, to taste

Olive oil cooking spray

3 limes, thinly sliced

1 tablespoon olive oil

3 tablespoons almonds, crushed

2 teaspoons fresh dill, chopped

Instructions

  1. Preheat the oven to 400°F.
  2. Lightly season the fish with pepper.
  3. Lightly coat a 9-by-9-inch baking dish with cooking spray.
  4. Lay the lime slices in the bottom of the baking dish, and arrange the fish fillets on top.
  5. Brush the fish with the olive oil, and sprinkle them with the almonds.
  6. Bake the fish until just cooked through and the almonds are golden, about 10 minutes.
  7. Serve with the chopped dill.
