Lemon-Herb Chicken

Soluble fiber helps stabilize blood-sugar levels, which helps people with diabetes better manage their condition. Lemons are a great addition to recipes, providing flavor to food without the need for salt or sugar.

Ingredients

12 ounces boneless, skinless chicken breast, cut into 8 strips

1 small egg white

2 tablespoons water, divided

½ cup bread crumbs

¼ cup unsalted butter, divided

Juice of 1 lemon

Zest of 1 lemon

1 tablespoon fresh chopped basil

1 teaspoon fresh chopped thyme

Lemon slices, for garnish

Instructions

  1. Place the chicken strips between 2 sheets of plastic wrap and pound each flat with a mallet or rolling pin.
  2. In a medium bowl, whisk together the egg and 1 tablespoon water.
  3. Put the bread crumbs in another medium bowl.
  4. Dredge the chicken strips, one at a time, in the egg, then the bread crumbs, and set the breaded strips aside on a plate.
  5. In a large skillet over medium heat, melt 2 tablespoons of the butter.
  6. Cook the strips in the butter for about 3 minutes, turning once, or until they are golden and cooked through.
  7. Transfer the chicken to a plate.

Cooking Tip

Add 1 tablespoon of fresh thyme for increased flavor
