Lemon-Herb Chicken

Lemons, part of the citrus family, are on the American Diabetes Association’s list of diabetes superfoods because they are high in soluble fiber and vitamin C. Soluble fiber helps stabilize blood-sugar levels, which helps people with diabetes better manage their condition. Lemons are a great addition to recipes, providing flavor to food without the need for salt or sugar.

12 ounces boneless, skinless chicken breast, cut into 8 strips
1 small egg white
2 tablespoons water, divided
½ cup bread crumbs
¼ cup unsalted butter, divided
Juice of 1 lemon
Zest of 1 lemon
1 tablespoon fresh chopped basil
1 teaspoon fresh chopped thyme
Lemon slices, for garnish
Instructions
- Place the chicken strips between 2 sheets of plastic wrap and pound each flat with a mallet or rolling pin.
- In a medium bowl, whisk together the egg and 1 tablespoon water.
- Put the bread crumbs in another medium bowl.
- Dredge the chicken strips, one at a time, in the egg, then the bread crumbs, and set the breaded strips aside on a plate.
- In a large skillet over medium heat, melt 2 tablespoons of the butter.
- Cook the strips in the butter for about 3 minutes, turning once, or until they are golden and cooked through.
- Transfer the chicken to a plate.
Cooking Tip
Add 1 tablespoon of fresh thyme for increased flavor
