Jamaican Jerk Chicken

Serving size

½ breast or 2 small drumsticks

Ingredients

8 pieces skinless chicken (4 breasts, 4 drumsticks)

½ teaspoon ground cinnamon

1 ½ teaspoon ground allspice

1 ½ teaspoon ground black pepper

1 tablespoon chopped hot pepper

1 teaspoon dried hot pepper

2 teaspoons oregano

2 teaspoons dried thyme

½ teaspoon salt

6 cloves garlic, finely chopped

1 cup onion, pureed or finely chopped

¼ cup vinegar

3 tablespoons brown sugar

Instructions

  1. Preheat oven to 350 °F.
  2. Wash chicken and pat dry.
  3. In a large bowl, combine all ingredients except chicken.
  4. Rub seasonings over chicken and marinate in the refrigerator for 6 hours or longer.
  5. Space chicken pieces evenly on a nonstick or lightly greased baking pan.
  6. Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an additional 30 to 40 minutes, or until the meat can easily be pulled away from the bone with a fork.

Cooking Tip

Marinate chicken in the fridge overnight for maximum flavor!
