Individual Apple Crisps
Fewer carbs than a traditional apple crisp with tons of flavor and a boost of omega-3’s from the flax!
Makes
Serving size
Ingredients
2 large sweet-tart apples (Braeburn, Honeycrisp or Pink Lady)
1 tablespoon flax seeds or flax meal
¼ cup almond flour
¼ cup quick oats
2 tablespoons Swerve® brown sweetener
¼ teaspoon cinnamon
⅛ teaspoon nutmeg
2 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350°F.
- Slice the apples in half and remove the core. Slice a thin strip from the underside of the apple so it will sit flat in the pan.
- Place into a baking dish with the cut and cored sides up.
- Grind the flax seeds in a grinder or food processor.
- Mix the flax, almond flour, oats, sweetener, cinnamon and nutmeg together in a bowl. Add the melted butter and mix well.
- Fill each apple with 2 tablespoons of the mixture.
- Bake on the middle rack for 35 to 40 minutes or until apples are soft but firm. If you can easily pierce the apple with a knife, they are ready.
Cooking Tip
May use a different nut flour. May use peaches instead of apples. May use regular brown sugar if your diet allows.
