Ingredients
2 tablespoons heavy cream
2 tablespoons water
2 teaspoons vinegar
¾ cup (90 grams) almond flour
2 tablespoons (15 grams) oat bran
¼ cup (32 grams) corn meal
¼ teaspoon baking soda
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon coarse salt
¼ teaspoon white pepper
⅛ teaspoon cayenne
2 teaspoons (5 grams) Swerve® powdered sugar
1 egg, beaten
1 teaspoon cornbread extract

Deep fryer or large pot
Instructions
- Heat 1-inch of oil to 325-350°F using a large pot, pan, or use a deep fryer.
- Mix the heavy cream, water, and vinegar together. Set aside.
- Whisk the almond flour, oat bran, corn meal, baking soda, all seasonings, and the sweetener together.
- Beat the egg and extract into the cream mixture, then add to the dry ingredients. Mix just until it comes together.
- Scoop 1 tablespoon size balls into the deep fryer and fry 1 to 2 minutes per side, or until golden brown. Make sure to adjust your heat as needed.
- Place on a paper towel lined pan to drain excess oil.
- Serve with any sauce you wish.
Cooking Tip
May replace the cornmeal with more almond flour. May use 2-ounces of buttermilk instead of the heavy cream, water, and vinegar mixture. Cornbread extract can be found online.
