Ingredients

2 tablespoons heavy cream

2 tablespoons water

2 teaspoons vinegar

¾ cup (90 grams) almond flour

2 tablespoons (15 grams) oat bran

¼ cup (32 grams) corn meal

¼ teaspoon baking soda

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon coarse salt

¼ teaspoon white pepper

⅛ teaspoon cayenne

2 teaspoons (5 grams) Swerve® powdered sugar

1 egg, beaten

1 teaspoon cornbread extract

 

Special equipment

Deep fryer or large pot

Instructions

  1. Heat 1-inch of oil to 325-350°F using a large pot, pan, or use a deep fryer.
  2. Mix the heavy cream, water, and vinegar together. Set aside.
  3. Whisk the almond flour, oat bran, corn meal, baking soda, all seasonings, and the sweetener together.
  4. Beat the egg and extract into the cream mixture, then add to the dry ingredients. Mix just until it comes together.
  5. Scoop 1 tablespoon size balls into the deep fryer and fry 1 to 2 minutes per side, or until golden brown. Make sure to adjust your heat as needed.
  6. Place on a paper towel lined pan to drain excess oil.
  7. Serve with any sauce you wish.

Cooking Tip

May replace the cornmeal with more almond flour. May use 2-ounces of buttermilk instead of the heavy cream, water, and vinegar mixture. Cornbread extract can be found online.
