Honey Mustard Tofu and Rice Bowl
Plant based meals like this are an integral part of the management of kidney disease, especially if you do not have any potassium restrictions. Tofu is used as a meat substitute, but it can be difficult to cook correctly without a few little tricks. First, by drying the tofu before you cook, you remove the extra water and that allows the tofu to crisp up more quickly in the oven. Second, the honey in the tofu marinade caramelizes in the oven, turning the tofu into a beautiful golden brown. The final dish is a little sweet, a little tart, a little crunchy and a lot delicious.

Ingredients
1 12-ounces package of extra firm tofu, cut into 1-inch cubes
½ cup white rice
2 tablespoons honey
2 tablespoons Dijon mustard
⅓ cup almonds, sliced
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
2 cups butter lettuce
⅓ cup dried cranberries
Freshly ground black pepper, to taste (optional, not included in nutritional analysis)
Instructions
- Preheat oven at 400°F.
- Spray a baking sheet with non-stick spray.
- 3. Dry the tofu squares by placing on paper towels, between two heavy plates, and let it sit for 20 minutes.
- Cook the rice per the package instructions.
- In a bowl, mix the honey and mustard. Remove 2 teaspoons of the honey mustard and set aside.
- Coat the tofu in the honey mustard mixture and place on the baking sheet.
- Cook tofu in the oven for 20 minutes, turning once halfway through.
- Place the almonds in the reserved honey mustard and stir to coat.
- Once tofu is finished, bake the almonds in the oven for 3-5 minutes or until they are brown and crispy. Check frequently.
- Whisk the olive oil with balsamic vinegar and pepper, if using.
- Divide the butter lettuce evenly between 3 bowls and top with rice, tofu, dried cranberries and the mustard almonds. Pour the dressing over each bowl and serve.
Cooking Tip
If you are able to eat a higher potassium diet, substitute black or brown rice for white rice. This will also add additional fiber. Spinach can be used in place of the lettuce for a higher potassium version as well.
