Homemade Tomato Sauce
This recipe is adapted from the late Marcella Hazan, the famed Italian cookbook author, as a scratch version of classic tomato sauce for use in any recipe. Add your own spices and fresh herbs and you are good to go.

2 cups crushed canned tomatoes, low sodium
1 small (70 grams) onion, diced
⅛ teaspoon sea salt
4 tablespoons butter
Instructions
- Combine all the ingredients in a small saucepan.
- Heat over medium heat and bring to a simmer.
- Simmer on low for about 45 minutes until it thickens.
- Serve in small portions wherever tomato sauce is referenced.
Cooking Tip
To extend the life of your homemade sauce, pour the tomato sauce into ice cube trays and freeze. Unmold and store frozen tomato sauce cubes in a plastic bag in the refrigerator. Use sparingly, per your kidney friendly recipes.
