Hibiscus Ice Pops

Hibiscus is an excellent choice for ice pops – it’s naturally high in vitamin C and antioxidants. You can find hibiscus tea in teabags or dried hibiscus flowers in containers. We love these pops with pieces of sweet ripe cherries inside!

Serving size

2 ounces popsicle

Ingredients

1½ cups hibiscus tea, warm

1 tablespoon honey

6 cherries, pitted and roughly chopped

Instructions

  1. Steep the tea to concentrate the flavor.
  2. Melt the honey in the tea while still warm. Stir to distribute evenly.
  3. Fill ice pop molds with sweetened tea.
  4. Drop chopped cherries into each ice pop. Place handle and freeze.

Cooking Tip

If you don’t have a cherry pitting tool, place cherries on a cutting board. Cover with a paper towel. Using a rolling pin or an empty wine bottle, beat the cherries under the towel until somewhat smashed. Remove the towel and the cherry pits can now be easily removed.
