Herbed Dijon Salmon
This quick salmon meal requires no preparation and uses some flavor boosting tricks. Dijon mustard, Herbes de Provence and lemon are fantastic ways to add taste to a dish without adding extra salt.

1 tablespoon extra-virgin olive oil
4 3-ounces salmon fillets
2 tablespoons Dijon mustard
4 teaspoons Herbes de Provence
1 teaspoon capers
6 kalamata olives, pitted
1 lemon, ½ cut into wedges and ½ juiced

Instructions
- Preheat oven to 350°F.
- Add olive oil to the bottom of a glass pan big enough to fit the salmon fillets. Place the salmon in the pan.
- Spread Dijon mustard over the fillets and sprinkle salmon with the Herbes de Provence.
- Add capers and olives to the pan, sprinkling some of each on top of the salmon fillets. Squeeze juice of ½ lemon over the salmon.
- Bake for 10-15 minutes until the salmon is cooked through. Serve with lemon wedges.
Cooking Tip
If you do not have Herbes de Provence, try Italian seasoning, dried thyme or basil, or even paprika. Mix it up even more by using artichoke hearts instead of the capers or olives.
