Hearty Beef Soup
Juicy and tender beef chunks that melt in your mouth. This recipe creates a delicious stew for you to enjoy with your family.

Ingredients
1 ½ pounds beef chuck or other inexpensive cut of beef
2 medium potatoes, dialyzed* (see tip section for instructions on how to do this)
2 tablespoons corn oil, divided
1 long green chile, sliced into ½-inch thick rings
¼ cup onion, chopped
1 garlic clove
¼ teaspoon salt
½ cup tomato, chopped
2 cups water
Instructions
- Cut meat into ½-inch cubes.
- In a large saucepan on medium high heat, fry potatoes in 1 tablespoon of oil. Add meat and brown.
- Set meat and potatoes aside.
- Sauté green chile, onion, garlic, salt, and tomato in remaining oil.
- Add meat and potatoes. Add water.
- Cover and simmer about 10 minutes.
Cooking Tip
*Dialyzed potatoes have less potassium than regular potatoes. To dialyze potatoes: Peel potatoes, place them into cold water so they won’t darken. Slice potatoes ⅛-inch thick. Rinse in warm water a few seconds. Soak for at least of 2 hours in warm water. Rinse under warm water again for a few seconds. Cook for 5 minutes, but with 5 times the amount of water to the amount of potatoes.
